Like most of the kids I knew, we were a meat-and-potatoes family. In the 1980s, this was considered a healthy diet\u2014don\u2019t forget to add vegetables!\u2014and, to some extent, it still is. We were told sugar was bad for us, especially for our teeth. As kids, we had no idea what \u2018saturated fat\u2019 or \u2018high cholesterol\u2019 meant. We ate what everyone else ate at the time, and as I entered my teen years, my diet was augmented by fast food, fried fast food, and salty (even greasy) snacks. Sodium? Forget it. What was sodium anyway?<br><br>When I arrived at Bemidji State, my basic diet didn\u2019t change appreciably except for more fatty food, fried food, and snacks than I ate at home. I gained the required freshman poundage, and I added beer and a few other over-21 beverages to my consumption habits.\u00a0<br><br>Given my appetite, shaped by my environment, who would have guessed I now live in a country whose favorite snack is\u2026 wait for it\u2026 an egg salad sandwich!<br><br>Okay, I don\u2019t want to jump too far ahead. A few years after graduation, my wife, my cats, and I moved to her birthplace, Japan.\u00a0\u00a0To say it was a period of adjustment would be an understatement. Forget the fact that in Japan, where the height of the average male is 5\u2019 7\u201d, I was a foot taller than the average male; I literally stood above the crowd. Not to mention, I look like someone who grew up in Iowa.\u00a0\u00a0<br><br>While I was acclimating to my new home and deciding what I wanted to do\u2014or could do\u2014for a living, I began adjusting to a new diet. I learned to eat weird vegetables in Japan. If you had told teenage me that I would be eating seaweed and daikon radish, I would have thought you were out of your mind. And all that red meat? I replaced a lot of it with fish. No, not yummy fried fish but healthy fish- like salmon, sardines, tuna, and mackerel\u2014mackerel? Yes, mackerel.<br><br>After graduating from BSU, I worked at two prominent US exhibit houses. Because of my education and my post-college introduction to the exhibit industry, I knew what my career goal was.\u00a0\u00a0(You can read all about my personal evolution from new graduate to business owner\u00a0<a href=\"https:\/\/idea-intl.com\/exhibits\/newsletters\/manage-global-exhibiting-programs\/\">here<\/a>\u00a0and\u00a0<a href=\"https:\/\/idea-intl.com\/exhibits\/newsletters\/idea-turns-20\/\">here<\/a>\u00a0if you\u2019re curious.)<br><br>So here I am, in my 50s. I have a successful, though often stressful, business I love; a wife who has stood by me through both sanity and craziness; two teenage kids; fabulous employees; clients I appreciate more than I can say; and a world that is changing every day.\u00a0<br><br>What we do for a living is demanding: emotionally, psychologically, and of course, physically. Travel is hard on our bodies; our sleep is regularly disrupted; meals are often catch-as-catch-can.<br><br>Ultra-processed foods are not typically part of the Japanese diet. Unfortunately, the influence of Western fast food has become pervasive, and metabolic diseases\u2014obesity, heart disease, high blood pressure, and Type 2 diabetes\u2014have become more prevalent in Japan\u2019s population.<br><br>According to reports, Americans appear increasingly aware of the health risks associated with ultra-processed foods, and there is a growing movement urging food companies to label these foods, be transparent about their health risks, and reduce sugar and salt levels.<br><br>But I digress.\u00a0<br><br>Back to the show floor: as anyone working in our industry knows, we need fuel for the work we do. I remember working in the US: the show site tables would be littered with snack-food packages\u2014potato chips, taco chips, corn chips, cookies, candy, sugary drinks. All of it to keep us going until we crashed from the fat and sugar.<br><br>In Japan, the number-one snack is Tamago sando, a Japanese-style egg salad sandwich. It is made with shokupan (Japanese milk bread that gained popularity after WWII) and a rich egg salad made with Kewpie mayonnaise, which, unlike standard American mayo, is made exclusively with egg yolks and a proprietary blend of rice and apple vinegars. Most of the sandwiches are crustless\u2014kind of like having the crusts cut off my bread when I was a toddler. And guess what? The Tamago sando has attracted devoted followers all over the world, far beyond Japan&#8217;s borders.<br><br>Where do you get an egg salad sandwich in Japan? Believe it or not, at 7-Eleven konbini (convenience stores) as well as at bakeries, kissaten\/caf\u00e9s, supermarket deli counters, and train-station bento shops. The Tamago sando is a staple of Japanese convenience and caf\u00e9 culture\u2014simple, ubiquitous, and increasingly celebrated in both low-cost and gourmet forms. It\u2019s a common grab-and-go lunch or snack. Japan\u2019s egg salad sandwiches are not only perfect for a quick meal but also a great source of protein to keep our energy up.\u00a0<br><br>Gourmet? The sandwiches can range from cheap convenience-store versions to artisan sandwiches in specialty shops, or to high-end versions featuring onsen Tamago, soft-scrambled eggs, or carefully seasoned egg creams. Anthony Bourdain had his favorites. The gourmet Tamago sando has become very trendy, with celebrity chefs or influencers touting their versions.\u00a0<br><br>The sando is truly fuel, and, as you say in the US, a fan favorite.<br><br>Simple to make! Here \u2014 you can\u00a0<a href=\"https:\/\/www.youtube.com\/shorts\/eBJ_b7a2v2o\" target=\"_blank\" rel=\"noreferrer noopener nofollow\">try it yourself<\/a>.
